Description

Shrimp Scampi is a classic Italian-American dish featuring succulent shrimp in a garlic, butter, and white wine sauce, all served over a bed of pasta. This easy and quick recipe is perfect for a weeknight dinner or a special occasion. The combination of zesty lemon, rich butter, and tender shrimp will have everyone coming back for seconds!

  • 1 pound (450g) large shrimp, peeled and deveined
  • 8 ounces (225g) linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine (or chicken broth)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Fresh lemon wedges, for garnish (optional)

Instructions

  • Cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
  • While the pasta cooks, heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  • Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
  • Add the white wine (or chicken broth) to the skillet, scraping any browned bits from the bottom. Bring the mixture to a simmer and cook for 2-3 minutes to reduce slightly.
  • Stir in the lemon juice and zest, then return the shrimp to the skillet. Cook for another 1-2 minutes until the shrimp are heated through.
  • Add the cooked pasta to the skillet, tossing everything together. If the sauce is too thick, add a little of the reserved pasta water to loosen it up.
  • Sprinkle with chopped parsley and adjust seasoning with more salt, pepper, or red pepper flakes, if desired.
  • Serve immediately, garnished with lemon wedges if desired.

  • You can substitute the white wine with chicken or vegetable broth if you prefer a non-alcoholic version.
  • For extra flavor, try adding freshly grated Parmesan cheese over the top just before serving.
  • You can use any kind of pasta you like, such as spaghetti, fettuccine, or even zucchini noodles for a low-carb option.
