Description

Shamrock Shake Pudding Cups are a fun, no-bake dessert featuring creamy vanilla pudding flavored with mint and tinted green. Topped with whipped cream and festive sprinkles, they’re the perfect St. Patrick’s Day treat!


Ingredients

  • 1 box (3.4 oz) instant vanilla pudding mix
  • 2 cups (480ml) cold whole milk
  • 1/2 tsp mint extract (or more to taste)
  • 34 drops green food coloring
  • 1/2 cup (120ml) whipped cream (plus extra for topping)
  • 8 Oreo cookies, crushed (for a crunchy base, optional)
  • Green or gold sprinkles (optional, for garnish)
  • Maraschino cherries (optional, for garnish)

Instructions

Make the Pudding

  1. In a large bowl, whisk together the vanilla pudding mix and cold milk for 2 minutes until thickened.
  2. Stir in mint extract and green food coloring until fully combined.

2. Add the Crunchy Base (Optional)

  1. If using crushed Oreos, divide them evenly among serving cups as the bottom layer.

3. Assemble the Pudding Cups

  1. Fold 1/2 cup of whipped cream into the pudding for a lighter texture.
  2. Spoon or pipe the pudding into serving cups over the cookie layer (if using).

4. Chill & Serve

  1. Refrigerate for at least 30 minutes to allow flavors to set.
  2. Top with whipped cream, sprinkles, and a cherry before serving.

Notes

  • For a boozy twist, add 1 tbsp of Irish cream liqueur (like Baileys) to the pudding.
  • Want it extra minty? Add a few extra drops of mint extract.
