Description

This Shamrock Delight Poke Cake is a soft vanilla or white cake, soaked in creamy mint pudding and topped with fluffy whipped topping. The green color and refreshing mint flavor make it the perfect festive dessert for St. Patrick’s Day. Light, fun, and easy to make!

Instructions

  • Bake the Cake:
  • Preheat oven to 350°F (175°C).
  • Prepare the cake mix according to package instructions, adding vanilla extract and a few drops of green food coloring for a festive touch.
  • Bake in a 9×13-inch pan for the time specified on the box.
  • Let the cake cool slightly.
  • Poke the Cake:
  • Using the handle of a wooden spoon, poke holes evenly across the cake.
  • Prepare the Filling:
  • In a bowl, whisk together pudding mix, cold milk, peppermint extract, and a few drops of green food coloring until smooth.
