Description

This Sausage and Veggies Skillet is a quick and easy one-pan meal that’s perfect for busy weeknights. Loaded with savory sausage, colorful veggies, and simple seasonings, it comes together in just 30 minutes. It’s hearty, healthy, and family-friendly!


Ingredients

  • 1 lb smoked sausage or chicken sausage, sliced into rounds

  • 1 red bell pepper, chopped

  • 1 yellow bell pepper, chopped

  • 1 zucchini, sliced

  • 1 yellow squash, sliced

  • 1 red onion, chopped

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • 1/2 teaspoon Italian seasoning

  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add the sliced sausage and cook until browned, about 5–7 minutes. Remove from skillet and set aside.

  3. In the same skillet, add the chopped bell peppers, zucchini, squash, and red onion.

  4. Sprinkle with garlic powder, paprika, Italian seasoning, salt, and pepper. Stir to combine.

  5. Cook for 7–10 minutes, stirring occasionally, until veggies are tender but still crisp.

  6. Add the cooked sausage back to the skillet and stir everything together.

  7. Cook for another 2–3 minutes, until everything is heated through.

  8. Serve hot and enjoy!


Notes

  • You can swap in any vegetables you have on hand—broccoli, mushrooms, or green beans work great too.

  • For extra flavor, squeeze a little lemon juice over the skillet before serving.

  • This dish also pairs well with rice, quinoa, or pasta if you want a more filling meal.
