Rotel Pasta Fiesta is a creamy, cheesy, Tex-Mex inspired pasta bake loaded with bold flavor! With seasoned ground beef, tender pasta, melty cheese, and zesty Rotel tomatoes, this one-pan dinner is perfect for busy weeknights or potlucks.
Ingredients

1 lb ground beef or ground turkey

1 small onion, chopped

1 (10 oz) can Rotel diced tomatoes with green chilies (do not drain)

1 (10.5 oz) can cream of mushroom soup

1 (10.5 oz) can cream of chicken soup

8 oz Velveeta cheese, cubed

2 cups cooked pasta (elbow, rotini, or penne work well)

Salt and pepper, to taste

Optional toppings: shredded cheddar, green onions, crushed tortilla chips
Instructions

Cook meat and onions: In a large skillet, brown the ground beef with chopped onion over medium heat. Drain excess grease if needed.

Add flavor: Stir in the Rotel, cream of mushroom soup, cream of chicken soup, and Velveeta cubes. Cook over low heat, stirring until the cheese is melted and the mixture is creamy.

Mix with pasta: Add the cooked pasta and stir to combine. Taste and season with salt and pepper if needed.

Serve or bake: Serve straight from the skillet, or pour into a greased 9×13 baking dish and bake at 350°F for 15–20 minutes for a bubbly, golden top.
