Description

This soft, fluffy pull-apart bread is infused with garlic butter and fresh rosemary, making it the perfect side for soups, pastas, or holiday meals!


Ingredients

Units Scale
For the Dough:
  • 3 1/2 cups (440g) all-purpose flour
  • 2 1/4 teaspoons (1 packet) active dry yeast or instant yeast
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 3/4 cup (180ml) warm milk (110°F/43°C)
  • 1/4 cup (56g) unsalted butter, melted
  • 1 large egg
For the Garlic Rosemary Butter:
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For Brushing:

 

  • 2 tablespoons butter, melted (after baking)
  • Extra rosemary & flaky sea salt (optional)

Instructions

Activate the Yeast (If Using Active Dry Yeast)

  • In a small bowl, mix warm milk, yeast, and sugar. Let sit for 5-10 minutes until foamy. (Skip this step if using instant yeast.)

2. Make the Dough

  • In a large bowl or stand mixer, combine flour and salt.
  • Add the yeast mixture (or warm milk if using instant yeast), melted butter, and egg. Mix until a soft dough forms.

3. Knead & Rise

  • Knead by hand for 8-10 minutes or in a stand mixer for 5-6 minutes, until the dough is smooth and elastic.
  • Place in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.

4. Prepare the Garlic Butter

  • In a small bowl, mix melted butter, minced garlic, rosemary, salt, and pepper. Set aside.

5. Shape the Rolls

  • Punch down the dough and divide it into 12 equal pieces. Roll each piece into a ball.
  • Dip each dough ball into the garlic butter mixture and place in a greased 9-inch round or 9×13-inch baking dish. Pour any remaining butter over the top.
  • Cover and let rise for 30-45 minutes, until puffy.

6. Bake the Bread

  • Preheat oven to 375°F (190°C).
  • Bake for 20-25 minutes, or until golden brown and cooked through.

7. Brush & Serve

 

  • Brush warm rolls with extra melted butter and sprinkle with fresh rosemary and flaky sea salt if desired.
  • Serve warm and enjoy!

Notes

Make Ahead: Refrigerate the dough overnight and bake fresh the next day.
Cheesy Version: Add ½ cup shredded Parmesan or mozzarella into the dough.
Dairy-Free: Use olive oil instead of butter and almond milk.
Extra Garlic Flavor: Add roasted garlic to the butter mixture.
