- 1 1/2 lbs baby potatoes (Yukon Gold or red potatoes), halved
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (8 oz) block feta cheese
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley or basil, chopped (for garnish)
- 1 tablespoon honey or lemon juice (optional, for finishing)
Instructions
- Preheat & Prep:
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease a baking dish.
- Season the Potatoes:
- In a large bowl, toss the halved potatoes with olive oil, garlic, oregano, smoked paprika, salt, and black pepper.
- Roast the Potatoes:
- Spread the potatoes in a single layer on the baking sheet, cut side down.
- Roast for 25 minutes, stirring halfway, until crispy and golden.
- Bake the Feta:
- After 25 minutes, push the potatoes to one side of the baking sheet.
- Place the block of feta on the empty side. Drizzle with a little olive oil and sprinkle with red pepper flakes.
- Continue roasting for another 10-15 minutes, until the feta is soft and slightly golden.
- Finish & Serve:
- Remove from the oven and garnish with fresh parsley or basil.
- Drizzle with honey or a squeeze of lemon juice for extra flavor.
- Serve immediately, breaking the baked feta over the potatoes. Enjoy!

- Want it extra crispy? Soak the potatoes in cold water for 20 minutes before roasting and dry thoroughly.
