Description

Crispy, golden roasted potatoes meet creamy, baked feta in this irresistible dish. Tossed with garlic, olive oil, and herbs, this recipe makes the perfect side dish or a delicious vegetarian main. Serve it with a drizzle of honey or a squeeze of lemon for an extra flavor boost!


Ingredients

  • 1 1/2 lbs baby potatoes (Yukon Gold or red potatoes), halved
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (8 oz) block feta cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley or basil, chopped (for garnish)
  • 1 tablespoon honey or lemon juice (optional, for finishing)

Instructions

  • Preheat & Prep:
    • Preheat oven to 400°F (200°C).
    • Line a baking sheet with parchment paper or lightly grease a baking dish.
  • Season the Potatoes:
    • In a large bowl, toss the halved potatoes with olive oil, garlic, oregano, smoked paprika, salt, and black pepper.
  • Roast the Potatoes:
    • Spread the potatoes in a single layer on the baking sheet, cut side down.
    • Roast for 25 minutes, stirring halfway, until crispy and golden.
  • Bake the Feta:
    • After 25 minutes, push the potatoes to one side of the baking sheet.
    • Place the block of feta on the empty side. Drizzle with a little olive oil and sprinkle with red pepper flakes.
    • Continue roasting for another 10-15 minutes, until the feta is soft and slightly golden.
  • Finish & Serve:
    • Remove from the oven and garnish with fresh parsley or basil.
    • Drizzle with honey or a squeeze of lemon juice for extra flavor.
    • Serve immediately, breaking the baked feta over the potatoes. Enjoy!

Notes

  • Want it extra crispy? Soak the potatoes in cold water for 20 minutes before roasting and dry thoroughly.
  • Make it spicy? Add more red pepper flakes or a drizzle of chili oil.
