Description

  • For the Roasted Potatoes:
  • 1 1/2 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano (or thyme)
  • 1/2 tsp smoked paprika (optional, for extra flavor)
  • For the Baked Feta & Garlic:
  • 1 (8 oz) block feta cheese
  • 1 whole head of garlic, top sliced off
  • 2 tbsp olive oil
  • 1/2 tsp red pepper flakes (optional, for spice)
  • 2 tbsp fresh parsley, chopped
  • Juice of 1/2 lemon

Instructions

  • Step 1: Roast the Potatoes
  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, toss potatoes with olive oil, salt, pepper, oregano, and smoked paprika.
  • Spread potatoes in a single layer, cut-side down, and roast for 30–35 minutes, flipping halfway, until golden and crispy.
  • Step 2: Bake the Feta & Garlic
  • Prepare the feta: Place the block of feta in a small baking dish. Drizzle with 1 tbsp olive oil and sprinkle with red pepper flakes.
  • Prepare the garlic: Wrap the whole head of garlic in foil with 1 tbsp olive oil. Place it on the baking sheet with the potatoes.
  • Bake the feta and garlic for 15 minutes, until the feta is soft and slightly golden.
  • Step 3: Assemble & Serve
  • Mash the roasted garlic: Once cooled, squeeze the roasted garlic cloves from their skins and mash them into a paste.
  • Combine everything: Toss the crispy potatoes with the roasted garlic, baked feta, and lemon juice. Sprinkle with fresh parsley.
  • Serve warm and enjoy!

Notes

  • Extra Crispy Potatoes: Soak potatoes in cold water for 15 minutes before roasting to remove starch.
  • Make it spicy: Add more red pepper flakes or a drizzle of hot honey.
  • Swap the herbs: Try fresh dill or basil instead of parsley.
