- For the Roasted Potatoes:
- 1 1/2 lbs baby potatoes, halved
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano (or thyme)
- 1/2 tsp smoked paprika (optional, for extra flavor)
- For the Baked Feta & Garlic:
- 1 (8 oz) block feta cheese
- 1 whole head of garlic, top sliced off
- 2 tbsp olive oil
- 1/2 tsp red pepper flakes (optional, for spice)
- 2 tbsp fresh parsley, chopped
- Juice of 1/2 lemon
Instructions
- Step 1: Roast the Potatoes
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss potatoes with olive oil, salt, pepper, oregano, and smoked paprika.
- Spread potatoes in a single layer, cut-side down, and roast for 30–35 minutes, flipping halfway, until golden and crispy.
- Step 2: Bake the Feta & Garlic
- Prepare the feta: Place the block of feta in a small baking dish. Drizzle with 1 tbsp olive oil and sprinkle with red pepper flakes.
- Prepare the garlic: Wrap the whole head of garlic in foil with 1 tbsp olive oil. Place it on the baking sheet with the potatoes.
- Bake the feta and garlic for 15 minutes, until the feta is soft and slightly golden.
- Step 3: Assemble & Serve
- Mash the roasted garlic: Once cooled, squeeze the roasted garlic cloves from their skins and mash them into a paste.
- Combine everything: Toss the crispy potatoes with the roasted garlic, baked feta, and lemon juice. Sprinkle with fresh parsley.
- Serve warm and enjoy!

- Extra Crispy Potatoes: Soak potatoes in cold water for 15 minutes before roasting to remove starch.
