Description

A simple and delicious side dish, these roasted baby carrots are lightly seasoned and caramelized to perfection. They’re perfect for any meal, from weeknight dinners to holiday feasts.


Ingredients

  • 1 lb baby carrots

  • 2 tbsp olive oil

  • 1 tbsp honey (optional, for a touch of sweetness)

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp dried thyme (or fresh thyme leaves)

 

  • 1/2 tsp smoked paprika (optional, for extra flavor)


Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • In a large bowl, toss the baby carrots with olive oil, honey (if using), salt, black pepper, garlic powder, thyme, and smoked paprika.

  • Spread the carrots in a single layer on the prepared baking sheet.

  • Roast for 25-30 minutes, stirring halfway through, until the carrots are tender and slightly caramelized.

 

  • Remove from the oven and serve warm. Enjoy!


Notes

  • For extra crispiness, broil the carrots for the last 2-3 minutes.

  • You can swap honey for maple syrup for a different flavor.

 

  • Sprinkle with fresh parsley or grated Parmesan before serving for an extra touch.
