Ingredients

1 lb baby carrots

2 tbsp olive oil

1 tbsp honey (optional, for a touch of sweetness)

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder

1/2 tsp dried thyme (or fresh thyme leaves)

1/2 tsp smoked paprika (optional, for extra flavor)
Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, toss the baby carrots with olive oil, honey (if using), salt, black pepper, garlic powder, thyme, and smoked paprika.

Spread the carrots in a single layer on the prepared baking sheet.

Roast for 25-30 minutes, stirring halfway through, until the carrots are tender and slightly caramelized.
