Description

This Rich Guinness Cake is a decadent and moist chocolate cake infused with the deep, malty flavors of Guinness stout. The beer enhances the chocolate, making it extra rich and fudgy. Topped with a creamy frosting that mimics the foamy head of a pint, this cake is perfect for St. Patrick’s Day or any special occasion!

For the Cake:

1 cup (240ml) Guinness stout beer

1/2 cup (113g) unsalted butter, cubed

3/4 cup (150g) brown sugar

3/4 cup (150g) granulated sugar

3/4 cup (180ml) sour cream or Greek yogurt

2 large eggs

2 tsp vanilla extract

2 cups (250g) all-purpose flour

1/2 cup (40g) unsweetened cocoa powder

1 1/2 tsp baking soda

1/2 tsp salt

For the Frosting: (Creamy, like a pint of Guinness!)

8 oz (226g) cream cheese, softened

1/2 cup (113g) unsalted butter, softened

2 cups (240g) powdered sugar

1 tsp vanilla extract

2 tbsp heavy cream (for extra fluffiness)


Instructions

Prepare the Cake Batter:

Preheat oven to 350°F (175°C).

Grease and line a 9-inch round cake pan (or use two 8-inch pans for a layered cake).

In a saucepan, heat Guinness and butter over medium heat until melted. Remove from heat and whisk in both sugars.

2. Mix the Wet & Dry Ingredients:

In a bowl, whisk sour cream, eggs, and vanilla, then mix into the Guinness mixture.

In a separate bowl, sift together flour, cocoa powder, baking soda, and salt.

Gradually fold dry ingredients into the wet mixture until combined (do not overmix).

3. Bake the Cake:

Pour batter into the prepared pan and bake for 40-45 minutes (30-35 minutes for two 8-inch pans).

A toothpick inserted in the center should come out clean.

Let cool in the pan for 10 minutes, then transfer to a wire rack.

4. Make the Frosting:

Beat cream cheese and butter together until smooth.

Gradually add powdered sugar and mix until fluffy.

Stir in vanilla and heavy cream until smooth.

5. Frost & Serve:

Spread frosting over the cooled cake.

Enjoy with a pint of Guinness or a cup of coffee!


Notes

  • Deeper Flavor: Let the cake sit overnight before serving—it gets even richer!
  • Cupcakes Option: Bake at 350°F (175°C) for 18-20 minutes.
