- 1 (15.25 oz) box red velvet cake mix
- 1/2 cup unsalted butter (melted) or 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup white chocolate chips (optional)
- Powdered sugar (for rolling, optional)
Instructions
- Preheat & Prepare:
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Mix the Dough:
- In a large bowl, combine cake mix, melted butter (or oil), eggs, and vanilla extract.
- Stir until fully combined (the dough will be thick).
- If using, fold in white chocolate chips.
- Shape the Cookies:
- Scoop 1 ½ tablespoon portions of dough and roll into balls.
- If desired, roll the balls in powdered sugar for a crinkle effect.
- Place on the prepared baking sheet, spacing about 2 inches apart.
- Bake:
- Bake for 9–11 minutes, or until the edges are set but the centers are still soft.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
