- 12 Raffaello pralines
- 250 g (1 cup) mascarpone
- 250 g (1 cup) Greek yogurt or quark
- 2 tbsp powdered sugar (optional)
- 1 tsp vanilla extract
- 200 g (1 1/2 cups) fresh raspberries (or thawed frozen raspberries)
- 4 tbsp shredded coconut
- 8 butter biscuits or ladyfingers, crushed
Instructions
- Step 1: Prepare the Raffaello Cream
- Chop Raffaellos – Roughly chop or mash the Raffaello pralines with a fork.
- Mix the Cream – In a bowl, mix mascarpone, Greek yogurt, vanilla extract, and powdered sugar until smooth. Fold in the chopped Raffaellos.
- Step 2: Assemble the Layers
- Biscuit Layer – Divide the crushed butter biscuits or ladyfingers among the glasses.
- First Cream Layer – Spoon a layer of Raffaello cream over the biscuits.
- Raspberry Layer – Add a layer of raspberries.
- Repeat Layers – Add another layer of Raffaello cream and top with raspberries and shredded coconut.
- Step 3: Chill & Serve
- Chill for at least 30 minutes to let the flavors blend.
- Garnish with shredded coconut and serve!
