- 4 medium potatoes, peeled and cut into wedges
- 2 bell peppers, chopped
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Optional: 1 tablespoon balsamic vinegar or honey for extra flavor
Instructions
- Preheat your oven to 400°F (200°C).
- Place the potato wedges on a large baking tray. Drizzle with olive oil and season with salt, pepper, and paprika. Toss to coat and spread them out evenly.
- Add the sausages, bell peppers, and onion to the tray. Drizzle everything with a little more olive oil and season with rosemary, thyme, salt, and pepper. Toss again to ensure everything is well coated.
- Sprinkle the minced garlic over the top and optionally drizzle with balsamic vinegar or honey for added flavor.
- Roast in the oven for 30-40 minutes, turning everything halfway through, until the sausages are cooked through and the potatoes are tender.
- Serve hot, garnished with fresh parsley.

- You can use any type of sausage you like—chicken, pork, or even vegetarian sausages work well in this recipe.
- For extra crispiness, you can broil the traybake for the last 2-3 minutes of cooking.
