Description: This quick and easy sausage traybake is a one-pan meal that’s perfect for busy weeknights. Juicy sausages are roasted with potatoes, bell peppers, onions, and a flavorful mix of herbs. It’s simple, flavorful, and requires minimal cleanup!

  • 6 sausages (any kind you prefer: pork, chicken, or plant-based)
  • 4 medium potatoes, peeled and cut into wedges
  • 2 bell peppers, chopped
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: 1 tablespoon balsamic vinegar or honey for extra flavor

Instructions

  • Preheat your oven to 400°F (200°C).
  • Place the potato wedges on a large baking tray. Drizzle with olive oil and season with salt, pepper, and paprika. Toss to coat and spread them out evenly.
  • Add the sausages, bell peppers, and onion to the tray. Drizzle everything with a little more olive oil and season with rosemary, thyme, salt, and pepper. Toss again to ensure everything is well coated.
  • Sprinkle the minced garlic over the top and optionally drizzle with balsamic vinegar or honey for added flavor.
  • Roast in the oven for 30-40 minutes, turning everything halfway through, until the sausages are cooked through and the potatoes are tender.
  • Serve hot, garnished with fresh parsley.

Notes

  • You can use any type of sausage you like—chicken, pork, or even vegetarian sausages work well in this recipe.
  • For extra crispiness, you can broil the traybake for the last 2-3 minutes of cooking.
  • Feel free to add more vegetables like zucchini or cherry tomatoes for variety!
