- 1/2 lb ground pork (or ground chicken/turkey)
- 1 cup shredded cabbage (or coleslaw mix)
- 1/2 cup shredded carrots
- 1/2 cup sliced mushrooms
- 2 green onions, sliced
- 1 tablespoon sesame seeds (for garnish)
- Fresh cilantro or basil (optional, for garnish)
Instructions
- Prepare the Sauce: In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sesame oil, sriracha, honey, garlic, and ginger. Set aside.
- Cook the Noodles: Boil water and cook the noodles according to the package instructions. Drain and set aside.
- Cook the Pork: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the ground pork and cook until browned, breaking it up as it cooks.
- Add the Veggies: Stir in the cabbage, carrots, and mushrooms. Cook for 3-4 minutes until veggies are slightly softened.
- Combine Everything: Add the cooked noodles to the skillet and pour the sauce over everything. Toss to combine and let it cook for another 2-3 minutes.
- Serve: Top with sliced green onions, sesame seeds, and optional fresh herbs. Enjoy!
Notes
- You can swap out the ground pork for chicken, turkey, or even tofu for a vegetarian option.
- Use pre-shredded coleslaw mix to save time on chopping.
- Adjust the spice level by adding more or less sriracha.
