Description

These Potsticker Noodle Bowls are packed with all the flavors of classic dumplings—savory ground pork, tender noodles, crisp veggies, and a mouthwatering sauce. It’s a quick and easy meal that comes together in under 30 minutes!


Ingredients

For the Sauce:

  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha (adjust to taste)
  • 1 teaspoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated

For the Bowl:

  • 8 oz lo mein noodles (or spaghetti as a substitute)
  • 1 tablespoon vegetable oil
  • 1/2 lb ground pork (or ground chicken/turkey)
  • 1 cup shredded cabbage (or coleslaw mix)
  • 1/2 cup shredded carrots
  • 1/2 cup sliced mushrooms
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds (for garnish)
  • Fresh cilantro or basil (optional, for garnish)

Instructions

  • Prepare the Sauce: In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sesame oil, sriracha, honey, garlic, and ginger. Set aside.
  • Cook the Noodles: Boil water and cook the noodles according to the package instructions. Drain and set aside.
  • Cook the Pork: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the ground pork and cook until browned, breaking it up as it cooks.
  • Add the Veggies: Stir in the cabbage, carrots, and mushrooms. Cook for 3-4 minutes until veggies are slightly softened.
  • Combine Everything: Add the cooked noodles to the skillet and pour the sauce over everything. Toss to combine and let it cook for another 2-3 minutes.
  • Serve: Top with sliced green onions, sesame seeds, and optional fresh herbs. Enjoy!

Notes

  • You can swap out the ground pork for chicken, turkey, or even tofu for a vegetarian option.
  • Use pre-shredded coleslaw mix to save time on chopping.
  • Adjust the spice level by adding more or less sriracha.
