Description
Sonhos, meaning “dreams” in Portuguese, are soft and fluffy doughnuts with a crisp golden exterior. These traditional Portuguese treats are deep-fried and coated in cinnamon sugar. They’re often enjoyed during holidays or festive gatherings but are easy enough to make anytime you’re craving something sweet and special.
Ingredients
-
1 cup water
-
2 tablespoons unsalted butter
-
1 tablespoon sugar
-
Pinch of salt
-
1 cup all-purpose flour
-
4 large eggs
-
Vegetable oil, for frying
For coating:
-
1/2 cup granulated sugar
-
1 teaspoon ground cinnamon
Instructions
-
In a medium saucepan over medium heat, combine water, butter, sugar, and salt. Bring to a boil.
-
Reduce heat to low and add flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan (about 2 minutes).
-
Remove from heat and let cool for 5–10 minutes.
-
Add eggs one at a time, beating well after each addition until the dough is smooth and glossy. The batter should be thick but pipeable.
-
Heat about 2 inches of vegetable oil in a deep pot to 350°F (175°C).
-
Carefully drop rounded teaspoons of dough into the hot oil, frying in batches. Don’t overcrowd the pot.
-
Fry for 3–4 minutes, turning occasionally, until puffed and golden brown.
-
Remove with a slotted spoon and drain on paper towels.
-
While still warm, roll each doughnut in the cinnamon sugar mixture.
-
Serve fresh and warm!
Notes
-
You can fill Sonhos with custard or jam for a twist.
-
Make sure the oil stays at the right temperature—too hot and they’ll burn, too cool and they’ll get greasy.
-
Best eaten the same day for maximum crispiness and fluff!
