Description

Sonhos, meaning “dreams” in Portuguese, are soft and fluffy doughnuts with a crisp golden exterior. These traditional Portuguese treats are deep-fried and coated in cinnamon sugar. They’re often enjoyed during holidays or festive gatherings but are easy enough to make anytime you’re craving something sweet and special.


Ingredients

  • 1 cup water

  • 2 tablespoons unsalted butter

  • 1 tablespoon sugar

  • Pinch of salt

  • 1 cup all-purpose flour

  • 4 large eggs

  • Vegetable oil, for frying

For coating:

 

  • 1/2 cup granulated sugar

  • 1 teaspoon ground cinnamon


Instructions

  • In a medium saucepan over medium heat, combine water, butter, sugar, and salt. Bring to a boil.

  • Reduce heat to low and add flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan (about 2 minutes).

  • Remove from heat and let cool for 5–10 minutes.

  • Add eggs one at a time, beating well after each addition until the dough is smooth and glossy. The batter should be thick but pipeable.

  • Heat about 2 inches of vegetable oil in a deep pot to 350°F (175°C).

  • Carefully drop rounded teaspoons of dough into the hot oil, frying in batches. Don’t overcrowd the pot.

  • Fry for 3–4 minutes, turning occasionally, until puffed and golden brown.

  • Remove with a slotted spoon and drain on paper towels.

  • While still warm, roll each doughnut in the cinnamon sugar mixture.

 

  • Serve fresh and warm!


Notes

  • You can fill Sonhos with custard or jam for a twist.

  • Make sure the oil stays at the right temperature—too hot and they’ll burn, too cool and they’ll get greasy.

 

  • Best eaten the same day for maximum crispiness and fluff!
