Description

This Pomegranate, Cranberry & Brie Bruschetta is a gorgeous and delicious holiday appetizer that combines sweet, tart, and creamy flavors in every bite. Crisp toasted baguette slices are topped with creamy Brie, a homemade cranberry-pomegranate relish, and finished with a drizzle of honey and fresh herbs. For the Bruschetta:

  • 1 baguette, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 8 ounces Brie cheese, sliced

For the Cranberry-Pomegranate Topping:

  • 1/2 cup fresh cranberries (or thawed frozen)
  • 1/4 cup pomegranate arils (seeds)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon balsamic vinegar
  • 1/4 teaspoon cinnamon (optional, for warmth)
  • 1 teaspoon orange zest
  • 1 tablespoon fresh orange juice
  • 1 tablespoon chopped fresh mint or rosemary

For Garnish:

  • Extra pomegranate arils
  • Drizzle of honey
  • Fresh mint or rosemary sprigs

Instructions

Toast the Baguette Slices:

  1. Preheat oven to 375°F (190°C).
  2. Arrange the baguette slices on a baking sheet and brush lightly with olive oil.
  3. Bake for 7-10 minutes, flipping halfway through, until golden and crisp.

2. Make the Cranberry-Pomegranate Topping:

  1. In a food processor, pulse the cranberries, pomegranate arils, honey, balsamic vinegar, cinnamon (if using), orange zest, and orange juice until finely chopped but still slightly chunky.
  2. Stir in the chopped mint or rosemary. Set aside.

3. Assemble the Bruschetta:

  1. Place a slice of Brie on each toasted baguette round.
  2. Spoon a small amount of the cranberry-pomegranate topping over the Brie.
  3. Garnish with extra pomegranate arils and a light drizzle of honey.

4. Serve & Enjoy:

  • Arrange on a serving platter and garnish with fresh mint or rosemary sprigs for a festive touch.
