Description

This Pioneer Woman-style sirloin tip roast is a tender, flavorful beef roast that’s perfect for Sunday dinners or special occasions. It’s seasoned simply with garlic, herbs, and black pepper, then roasted to perfection and served with a rich, savory gravy made from pan drippings.


Ingredients

  • 3-4 lb sirloin tip roast

  • 2 tablespoons olive oil

  • 4 garlic cloves, minced

  • 1 tablespoon kosher salt

  • 1 teaspoon black pepper

  • 1 tablespoon dried rosemary (or 2 tbsp fresh)

  • 1 tablespoon dried thyme

  • 1 onion, sliced

  • 2 cups beef broth

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon cornstarch (optional, for thickening)

  • 2 tablespoons cold water (if using cornstarch)


Instructions

  1. Preheat oven to 450°F (230°C).

  2. Pat the roast dry with paper towels. Rub with olive oil.

  3. In a small bowl, mix together garlic, salt, pepper, rosemary, and thyme. Rub the mixture all over the roast.

  4. Place sliced onions in the bottom of a roasting pan. Set the roast on top of the onions.

  5. Pour the beef broth and Worcestershire sauce into the pan around the roast.

  6. Roast in the oven for 15 minutes, then reduce the temperature to 325°F (160°C).

  7. Continue roasting for about 1.5 to 2 hours, or until internal temperature reaches 135°F (for medium-rare) or 145°F (for medium).

  8. Remove roast from oven, tent with foil, and let rest for 15 minutes before slicing.

  9. Optional Gravy: While the roast rests, place the roasting pan on the stovetop over medium heat.

  10. Skim off any excess fat. Mix cornstarch with cold water, then stir into pan juices.

  11. Simmer until thickened, about 3–5 minutes. Serve gravy over sliced roast.


 


Notes

  • For best results, use a meat thermometer to check doneness.

  • This roast pairs perfectly with mashed potatoes or roasted vegetables.

  • Letting the meat rest ensures it stays juicy and tender when sliced.
