Description

This Pineapple Chipotle Salsa is a perfect blend of sweet, smoky, and spicy flavors! Fresh pineapple, smoky chipotle peppers, and zesty lime juice come together in this vibrant salsa that’s great for tacos, grilled meats, or dipping with tortilla chips.


Ingredients

  • 2 cups fresh pineapple (diced)

  • 1/2 small red onion (finely diced)

  • 1 chipotle pepper in adobo sauce (finely chopped) (adjust for spice level)

  • 1 tbsp adobo sauce (from the chipotle can, for extra smokiness)

  • 1/2 cup Roma tomatoes (diced)

  • 1/4 cup fresh cilantro (chopped)

  • 1 small jalapeño (seeded and diced, optional for extra heat)

  • 1 tbsp lime juice (freshly squeezed)

  • 1/2 tsp salt

 

  • 1/4 tsp black pepper


Instructions

  • Prepare the Ingredients:

    • Dice the pineapple, red onion, and Roma tomatoes.

    • Finely chop the chipotle pepper and jalapeño.

  • Mix the Salsa:

    • In a medium bowl, combine pineapple, red onion, tomatoes, chipotle pepper, adobo sauce, cilantro, and lime juice.

    • Season with salt and black pepper.

  • Let the Flavors Meld:

    • Stir everything together and let sit for 10-15 minutes for the flavors to develop.

  • Make it milder: Use half a chipotle pepper or omit the jalapeño.
