These sweet and savory skewers are packed with tropical flavors, making them perfect for grilling season or a quick oven-baked meal!
Ingredients
For the Kebabs:
2 boneless, skinless chicken breasts, cut into 1-inch cubes
2 cups fresh pineapple, cut into chunks
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 red onion, cut into chunks
Wooden or metal skewers
For the Marinade:
1/4 cup soy sauce (or coconut aminos for gluten-free)
2 tbsp honey (or maple syrup)
1 tbsp olive oil
1 tbsp lime juice
2 cloves garlic, minced
1/2 tsp ginger, grated
1/2 tsp black pepper
Instructions
- Prepare the Marinade – In a bowl, whisk together soy sauce, honey, olive oil, lime juice, garlic, ginger, and black pepper.
- Marinate the Chicken – Place chicken cubes in a resealable bag or bowl, pour in the marinade, and toss to coat. Let marinate for at least 30 minutes (or up to 2 hours for more flavor).
- Assemble the Skewers – Thread chicken, pineapple, bell peppers, and red onion onto skewers, alternating for color and flavor.
- Grill or Bake:
- Grill: Preheat grill to medium-high heat. Cook skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
- Oven: Preheat oven to 400°F (200°C). Place skewers on a baking sheet and bake for 18-20 minutes, flipping halfway through. Broil for 2-3 minutes for extra char.
- Serve & Enjoy – Garnish with fresh cilantro or sesame seeds and serve with rice or a fresh salad!
Notes
Want it spicy? Add ½ tsp red pepper flakes to the marinade.
Use canned pineapple if fresh isn’t available, but drain well to avoid excess moisture.
For extra smoky flavor, brush skewers with BBQ sauce in the last few minutes of cooking.
