Description

These Pie Crust Cookies are the easiest way to turn leftover pie dough into a sweet, crispy treat! Flaky, buttery, and sprinkled with cinnamon sugar, these cookies are perfect for snacking, dipping in coffee, or serving alongside ice cream. They’re a quick and delicious way to make the most of extra pie crust!


Ingredients

  • 1 pre-made or homemade pie crust (store-bought or your favorite recipe)

  • 2 tablespoons unsalted butter, melted

  • 1/4 cup (50g) granulated sugar

  • 1 teaspoon cinnamon

 

  • 1 tablespoon milk (for brushing)


Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  • Roll out the pie crust on a lightly floured surface until about ⅛-inch thick.

  • Brush with melted butter, then sprinkle with cinnamon sugar (mix sugar and cinnamon in a small bowl first).

  • Cut into shapes using cookie cutters or slice into strips with a knife.

  • Transfer to the baking sheet, spacing cookies slightly apart.

  • Brush with milk for a golden finish.

  • Bake for 10-12 minutes, or until golden brown and crispy.

 

  • Let cool for a few minutes, then enjoy as-is or dip in chocolate or caramel sauce!
