Description

This Pesto Grilled Cheese is a delicious twist on the classic! Buttery, crispy bread is packed with gooey melted cheese and fresh basil pesto for an easy, gourmet upgrade. Perfect for a quick meal, this sandwich pairs well with tomato soup or a simple salad.


Ingredients

  • 4 slices of bread (sourdough, ciabatta, or your favorite)
  • 2 tbsp butter, softened
  • 4 tbsp pesto (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese (or provolone)
  • 2 tbsp grated Parmesan cheese
  • Optional: 2 tomato slices or fresh spinach leaves

Instructions

  • Prepare the Bread: Spread butter evenly on one side of each bread slice. Flip the bread over and spread 1 tablespoon of pesto on the unbuttered side of each slice.

  • Assemble the Sandwich: Sprinkle a mix of mozzarella, cheddar, and Parmesan cheese over two slices of bread (on the pesto side). If using, add tomato slices or spinach. Place the other two slices of bread on top, butter side facing out.

  • Grill the Sandwich: Heat a skillet or griddle over medium heat. Place the sandwiches in the pan and cook for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden brown and crispy and the cheese is melted.

  • Serve & Enjoy: Remove from heat, let it cool for a minute, then slice and serve warm.
