- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar (plus extra for rolling)
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup finely crushed peppermint candies or candy canes
- 1/2 cup finely chopped pecans or walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the butter and powdered sugar until light and fluffy. Mix in vanilla and peppermint extract.
- Stir in flour and salt until just combined. Fold in crushed peppermint and nuts (if using).
- Roll dough into 1-inch balls and place on the prepared baking sheet about 1 inch apart.
- Bake for 12–14 minutes, until the bottoms are lightly golden. Let cool for 5 minutes.
- While still warm, roll each cookie in powdered sugar. Let cool completely, then roll again for a thick, snowy coating.
- Store in an airtight container for up to a week.
Notes
- For a richer peppermint flavor, add a few drops of peppermint extract to the powdered sugar.
- If the dough feels too dry, add 1 tablespoon of milk.
- Try dipping the bottoms in melted chocolate for an extra treat.
