Description

This Peanut Butter & Jelly Cobbler is a nostalgic dessert that combines the creamy, nutty goodness of peanut butter with the fruity sweetness of jam or jelly. With a soft, biscuit-like peanut butter topping and a gooey berry filling, it’s the perfect treat for PB&J lovers!


Ingredients

  • For the Jelly Filling:
  • 3 cups fresh or frozen berries (strawberries, raspberries, or blueberries)
  • 1/2 cup fruit preserves or jam (strawberry, raspberry, or grape)
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • For the Peanut Butter Biscuit Topping:
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup granulated sugar
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk (or buttermilk)
  • 1/2 tsp vanilla extract
  • For Topping (Optional):
  • 1/4 cup chopped peanuts
  • 1 tbsp powdered sugar (for dusting)

Instructions

  • 1. Preheat & Prepare the Filling:
  • Preheat oven to 375°F (190°C).
  • In a mixing bowl, combine berries, jam, sugar, cornstarch, lemon juice, and vanilla.
  • Stir well and pour into a 9-inch baking dish.
  • 2. Make the Peanut Butter Biscuit Topping:
  • In a bowl, whisk flour, baking powder, salt, and sugar.
  • In another bowl, mix peanut butter, melted butter, milk, and vanilla until smooth.
  • Gradually add the dry ingredients, stirring until a soft dough forms.
  • 3. Assemble & Bake:
  • Drop spoonfuls of the peanut butter dough evenly over the berry filling.
  • Sprinkle with chopped peanuts, if using.
  • Bake for 30–35 minutes, or until the topping is golden brown and the filling is bubbling.
  • 4. Serve & Enjoy!
  • Let cool for 10 minutes, then dust with powdered sugar.
  • Serve warm with vanilla ice cream or whipped cream!

Notes

  • Prefer a crunchier topping? Add ¼ cup oats to the biscuit dough.
  • Swap peanut butter for almond or cashew butter for a twist.
  • Use different jams like apricot or blackberry for new flavors.
  • Make it nut-free by using sunflower seed butter instead.
