- For the Jelly Filling:
- 3 cups fresh or frozen berries (strawberries, raspberries, or blueberries)
- 1/2 cup fruit preserves or jam (strawberry, raspberry, or grape)
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- For the Peanut Butter Biscuit Topping:
- 1 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup granulated sugar
- 1/2 cup creamy peanut butter
- 1/4 cup unsalted butter, melted
- 1/2 cup milk (or buttermilk)
- 1/2 tsp vanilla extract
- For Topping (Optional):
- 1/4 cup chopped peanuts
- 1 tbsp powdered sugar (for dusting)
Instructions
- 1. Preheat & Prepare the Filling:
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine berries, jam, sugar, cornstarch, lemon juice, and vanilla.
- Stir well and pour into a 9-inch baking dish.
- 2. Make the Peanut Butter Biscuit Topping:
- In a bowl, whisk flour, baking powder, salt, and sugar.
- In another bowl, mix peanut butter, melted butter, milk, and vanilla until smooth.
- Gradually add the dry ingredients, stirring until a soft dough forms.
- 3. Assemble & Bake:
- Drop spoonfuls of the peanut butter dough evenly over the berry filling.
- Sprinkle with chopped peanuts, if using.
- Bake for 30–35 minutes, or until the topping is golden brown and the filling is bubbling.
- 4. Serve & Enjoy!
- Let cool for 10 minutes, then dust with powdered sugar.
- Serve warm with vanilla ice cream or whipped cream!

- Prefer a crunchier topping? Add ¼ cup oats to the biscuit dough.
- Swap peanut butter for almond or cashew butter for a twist.
