Description

Peanut Butter Cup Christmas Cookies are a delightful treat that combines the rich flavors of peanut butter and chocolate, making them a festive favorite during the holiday season. These soft, chewy cookies are baked in mini muffin tins and feature a mini peanut butter cup nestled in the center, offering a perfect blend of textures and tastes

Ingredients

Units Scale

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 3040 miniature chocolate-covered peanut butter cups, unwrapped

Instructions

  • Preheat Oven: Set your oven to 375°F (190°C).
  • Prepare Dry Ingredients: In a medium bowl, whisk together the flour, salt, and baking soda. Set aside.
  • Cream Wet Ingredients: In a large bowl, cream together the softened butter, granulated sugar, brown sugar, and peanut butter until the mixture is light and fluffy.
  • Add Egg and Vanilla: Beat in the egg, vanilla extract, and milk until well combined.
  • Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Form Dough Balls: Shape the dough into 1-inch balls. Place each ball into an ungreased mini muffin tin cavity.
  • Bake: Bake in the preheated oven for about 8 minutes, or until the edges are lightly golden.
  • Insert Peanut Butter Cups: Immediately upon removing the cookies from the oven, press a miniature peanut butter cup into the center of each cookie. The edges of the cookie should form around the candy.
  • Cool: Allow the cookies to cool in the muffin tin for about 10 minutes before transferring them to a wire rack to cool completely.

Notes

  • Unwrapping Tip: To save time, unwrap the miniature peanut butter cups while the cookies are baking.
  • Storage: Store the cooled cookies in an airtight container at room temperature for up to a week.
  • Freezing: These cookies freeze well. Place them in a single layer on a baking sheet to freeze, then transfer to a freezer-safe container. Thaw at room temperature before serving
