Peanut Butter Balls are a sweet and simple treat that combines creamy peanut butter with powdered sugar, coated in rich chocolate. - 1 cup (250g) peanut butter (smooth or chunky)
- 1 1/2 cups (180g) powdered sugar
- 2 cups (340g) graham cracker crumbs
- 1 teaspoon vanilla extract
- 1 1/2 cups (255g) semi-sweet chocolate chips
- 2 tablespoons coconut oil (or vegetable oil, for smoother coating)

- In a large mixing bowl, combine the peanut butter, powdered sugar, and graham cracker crumbs. Stir until everything is well combined and forms a dough-like consistency.
- Add the vanilla extract and mix again.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Place the peanut butter balls in the freezer for at least 30 minutes to firm up.
- While the peanut butter balls are chilling, melt the chocolate chips and coconut oil together. You can do this in the microwave in 30-second intervals, stirring in between, or use a double boiler on the stovetop.
- Once the peanut butter balls have firmed up, dip each one into the melted chocolate, coating it completely. Use a fork to lift it out of the chocolate and gently tap off excess chocolate.
- Return the coated peanut butter balls to the parchment paper-lined baking sheet.
- Refrigerate the chocolate-covered peanut butter balls for about 30 minutes, or until the chocolate has hardened.
- Store the peanut butter balls in an airtight container in the fridge for up to 1-2 weeks. Enjoy!
Notes

- For a different flavor, you can sprinkle a pinch of sea salt on top of the chocolate before it hardens for a sweet-salty treat.
- You can also add a little melted chocolate to the peanut butter mixture for extra chocolate flavor inside the ball.
- If you don’t like graham cracker crumbs, you can substitute with crispy rice cereal for a bit of crunch.
