  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 tablespoon honey (optional for sweetness)

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the peeled and cut carrots with olive oil, minced garlic, salt, pepper, and dried thyme (if using) until they are well coated.
  • Spread the carrots out in a single layer on a baking sheet.
  • Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and golden brown, stirring halfway through for even cooking.
  • Remove the carrots from the oven and sprinkle the grated Parmesan cheese over the top while they are still hot.
  • Return the carrots to the oven for an additional 5-7 minutes, or until the cheese is melted and slightly crispy.
