This sweet and tangy vinaigrette blends ripe peaches with honey, Dijon mustard, and balsamic vinegar for a fresh, fruity twist on a classic salad dressing. It’s creamy, naturally sweetened, and takes just minutes to whip up. Great over mixed greens, grilled chicken, or even as a marinade!
Ingredients

1 ripe peach, peeled and pitted

2 tablespoons honey

1 tablespoon Dijon mustard

3 tablespoons balsamic vinegar

1/4 cup extra virgin olive oil

1 tablespoon water (optional, to thin)

1 small garlic clove (optional), minced

Salt and black pepper to taste
Instructions

Add the peach, honey, Dijon mustard, and balsamic vinegar to a blender or food processor.

Blend until smooth.

While blending, slowly drizzle in the olive oil until the dressing is emulsified and creamy.

Add water if you want to thin it slightly.

Season with salt and pepper to taste.

Store in a sealed jar in the fridge for up to 5 days. Shake well before each use.

Use fresh or frozen (thawed) peaches. If peaches aren’t sweet, add a bit more honey.
