Description

This sweet and tangy vinaigrette blends ripe peaches with honey, Dijon mustard, and balsamic vinegar for a fresh, fruity twist on a classic salad dressing. It’s creamy, naturally sweetened, and takes just minutes to whip up. Great over mixed greens, grilled chicken, or even as a marinade!


Ingredients

  • 1 ripe peach, peeled and pitted

  • 2 tablespoons honey

  • 1 tablespoon Dijon mustard

  • 3 tablespoons balsamic vinegar

  • 1/4 cup extra virgin olive oil

  • 1 tablespoon water (optional, to thin)

  • 1 small garlic clove (optional), minced

 

  • Salt and black pepper to taste


Instructions

  • Add the peach, honey, Dijon mustard, and balsamic vinegar to a blender or food processor.

  • Blend until smooth.

  • While blending, slowly drizzle in the olive oil until the dressing is emulsified and creamy.

  • Add water if you want to thin it slightly.

  • Season with salt and pepper to taste.

 

  • Store in a sealed jar in the fridge for up to 5 days. Shake well before each use.


Notes

  • Use fresh or frozen (thawed) peaches. If peaches aren’t sweet, add a bit more honey.

  • Great over spinach salad with goat cheese and pecans!

 

  • Try grilling the peach first for a smoky flavor boost.
