For the Cinnamon Sugar Filling:

  • 3/4 cup brown sugar

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Make the dough:

    • In a large bowl, dissolve yeast in warm milk and let sit for 5-10 minutes until foamy.
    • Add sugar, melted butter, eggs, flour, and salt. Mix until a dough forms.
    • Knead the dough for 5-7 minutes until smooth and elastic (or use a stand mixer with a dough hook). Cover the bowl with a towel and let the dough rise for 1 hour, or until doubled in size.
  2. Prepare the peach filling:

    • In a saucepan over medium heat, combine diced peaches, brown sugar, cinnamon, nutmeg, and cornstarch (if using fresh peaches).
    • Cook for 5-7 minutes until the mixture thickens, then set aside to cool.
  3. Prepare the cinnamon sugar filling:

    • In a small bowl, mix the softened butter, brown sugar, and cinnamon until smooth.
  4. Roll out and fill:

    • Punch down the dough and roll it out on a floured surface into a rectangle (about 12×18 inches).
    • Spread the cinnamon sugar mixture evenly over the dough.
    • Spoon the cooled peach filling on top, distributing evenly.
  5. Shape the rolls:
