Description

These Parmesan Garlic Roasted Carrots are a simple yet delicious side dish! Roasting brings out the natural sweetness of the carrots, while garlic and parmesan add a savory, cheesy flavor. Perfect for any meal!


Ingredients

  • 1 lb (about 4-5 medium) carrots, peeled and cut into sticks
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano (or thyme)
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  • Prepare the carrots by cutting them into sticks or leaving them whole if they are thin.
  • Toss the carrots in a bowl with olive oil, minced garlic, salt, pepper, and oregano until evenly coated.
  • Spread the carrots on the baking sheet in a single layer.
  • Roast for 20-25 minutes, turning once, until tender and slightly caramelized.
  • Sprinkle Parmesan cheese over the carrots in the last 5 minutes of roasting.
  • Remove from the oven and garnish with fresh parsley before serving.
