- 1 lb (about 4-5 medium) carrots, peeled and cut into sticks
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried oregano (or thyme)
- 1/4 cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- Prepare the carrots by cutting them into sticks or leaving them whole if they are thin.
- Toss the carrots in a bowl with olive oil, minced garlic, salt, pepper, and oregano until evenly coated.
- Spread the carrots on the baking sheet in a single layer.
- Roast for 20-25 minutes, turning once, until tender and slightly caramelized.
- Sprinkle Parmesan cheese over the carrots in the last 5 minutes of roasting.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- For extra crispiness, broil for the last 2-3 minutes.
