For the Cod:
- 4 cod fillets (about 6 oz each)

- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
For the White Wine Tomato Basil Sauce:
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 pint cherry tomatoes, halved (or 2 large tomatoes, diced)
- 1/2 cup dry white wine (like Sauvignon Blanc or Pinot Grigio)
- 1/4 teaspoon red pepper flakes (optional, for a hint of heat)
- Salt and freshly ground black pepper, to taste
- 1/4 cup fresh basil leaves, chopped (plus more for garnish)
- 1 tablespoon fresh lemon juice (optional, for brightness)
Instructions
- Prepare the Cod:
Pat the cod fillets dry with paper towels and season both sides with salt and pepper. - Sear the Cod:
Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the cod fillets and cook for 3–4 minutes on each side, or until golden brown and the fish flakes easily with a fork. Remove the cod from the pan and set aside on a plate. Cover loosely with foil to keep warm. - Make the Sauce:
In the same skillet, add 2 tablespoons of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it. Add the cherry tomatoes and cook for 3–4 minutes until they start to soften and release their juices. - Deglaze with Wine:
Pour in the white wine and stir, scraping up any browned bits from the bottom of the pan. Add the red pepper flakes (if using), and season with salt and pepper to taste. Let the sauce simmer for 4–5 minutes, reducing slightly. - Add Basil and Finish the Sauce:
Stir in the fresh basil and lemon juice (if using). Adjust seasoning if needed. - Combine and Serve:
Return the cod fillets to the pan, spooning some of the sauce over the top. Simmer gently for 1–2 minutes to warm the fish through. - Garnish and Serve:
Garnish with extra fresh basil and serve immediately. This dish pairs beautifully with rice, couscous, or crusty bread to soak up the sauce.
