- For the Chicken:
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 1/2 teaspoons Cajun seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- For the Pasta:
- 2 tablespoons butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cups chicken broth
- 1 cup heavy cream (or half-and-half for a lighter option)
- 1 (14 oz) can diced tomatoes (drained)
- 8 oz penne pasta (or any short pasta)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional, for extra heat)
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Season & Cook the Chicken:
- In a bowl, toss chicken pieces with Cajun seasoning, salt, and black pepper.
- Heat olive oil in a large pot over medium-high heat. Add chicken and cook for 5-6 minutes, until browned and cooked through. Remove and set aside.
- Sauté the Veggies:
- In the same pot, melt butter. Add diced onion and sliced bell peppers, sautéing for 3-4 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Cook the Pasta:
- Pour in chicken broth, heavy cream, and diced tomatoes. Stir in smoked paprika and red pepper flakes.
- Add the uncooked pasta and bring to a simmer. Cover and cook for 12-14 minutes, stirring occasionally, until pasta is tender.
- Finish with Cheese & Chicken:
- Stir in Parmesan cheese until melted and creamy. Return the cooked chicken to the pot and mix well.
- Serve & Enjoy:
- Garnish with fresh parsley and extra Parmesan. Serve warm!
