1/4 cup grated Parmesan cheese
-
2 tbsp fresh parsley (chopped, for garnish)
Instructions
-
Prepare the Chicken:
-
Pat the chicken thighs dry and season both sides with salt, pepper, garlic powder, oregano, and paprika.
-
-
Sear the Chicken:
-
Heat olive oil and butter in a large skillet over medium-high heat.
-
Sear the chicken, skin-side down, for 5-6 minutes until golden brown. Flip and cook for another 3 minutes. Remove and set aside.
-
-
Cook the Orzo:
-
In the same skillet, add garlic and cook for 30 seconds until fragrant.

Stir in the orzo and toast for 1-2 minutes.

Pour in chicken broth, water, lemon zest, lemon juice, salt, black pepper, and thyme. Stir well.
-
-
Simmer with Chicken:
-
Nestle the chicken thighs back into the skillet on top of the orzo.
-
Reduce heat to low, cover, and simmer for 15 minutes until the orzo is tender and the chicken is cooked through.
-
-
Finish & Serve:
-
Remove from heat and stir in Parmesan cheese.
-
Garnish with fresh parsley and extra lemon wedges if desired.
-
Serve hot and enjoy!
-
Notes
-
Swap the orzo: Use rice or couscous for a different texture.
-
Make it creamy: Stir in a splash of heavy cream at the end.
-
Add veggies: Stir in spinach or cherry tomatoes for extra nutrition.
