- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1 1/2 cups milk (dairy or non-dairy)
- 2 eggs (or flax eggs for vegan option)
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 2 tbsp melted butter or coconut oil
- 1 apple, diced (Honeycrisp, Fuji, or Granny Smith work best)
- 1/4 cup chopped nuts (pecans or walnuts) (optional)
- 1/4 cup raisins or dried cranberries (optional)
Instructions
- Preheat Oven: Set your oven to 375°F (190°C) and grease an 8×8-inch baking dish.
- Mix Dry Ingredients: In a large bowl, combine oats, baking powder, cinnamon, nutmeg, and salt.
- Mix Wet Ingredients: In another bowl, whisk together milk, eggs, maple syrup, vanilla, and melted butter.
- Combine & Add Apples: Pour the wet mixture into the dry ingredients and stir well. Fold in the diced apples, nuts, and raisins (if using).
- Bake: Transfer the mixture to the prepared baking dish and bake for 35-40 minutes, until the top is golden brown and set.
- Serve: Let cool slightly before serving. Enjoy warm with milk, yogurt, or extra maple syrup!
Notes
For a vegan version, use flax eggs (2 tbsp flaxseed meal + 5 tbsp water) and non-dairy milk.
Make it gluten-free by using certified gluten-free oats.
For extra sweetness, add ½ mashed banana to the wet ingredients.
