Description

This Oatmeal Apple Breakfast Bake is warm, comforting, and packed with cinnamon-spiced apples and hearty oats. It’s naturally sweetened with maple syrup and makes a great make-ahead breakfast for busy mornings. Serve it warm with a drizzle of honey, a splash of milk, or a dollop of yogurt for the perfect start to your day!

 


Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 1/2 cups milk (dairy or non-dairy)
  • 2 eggs (or flax eggs for vegan option)
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 2 tbsp melted butter or coconut oil
  • 1 apple, diced (Honeycrisp, Fuji, or Granny Smith work best)
  • 1/4 cup chopped nuts (pecans or walnuts) (optional)
  • 1/4 cup raisins or dried cranberries (optional)

Instructions

  • Preheat Oven: Set your oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  • Mix Dry Ingredients: In a large bowl, combine oats, baking powder, cinnamon, nutmeg, and salt.
  • Mix Wet Ingredients: In another bowl, whisk together milk, eggs, maple syrup, vanilla, and melted butter.
  • Combine & Add Apples: Pour the wet mixture into the dry ingredients and stir well. Fold in the diced apples, nuts, and raisins (if using).
  • Bake: Transfer the mixture to the prepared baking dish and bake for 35-40 minutes, until the top is golden brown and set.
  • Serve: Let cool slightly before serving. Enjoy warm with milk, yogurt, or extra maple syrup!

Notes

For a vegan version, use flax eggs (2 tbsp flaxseed meal + 5 tbsp water) and non-dairy milk.

Make it gluten-free by using certified gluten-free oats.

For extra sweetness, add ½ mashed banana to the wet ingredients.

Store leftovers in the fridge for up to 5 days or freeze individual portions for easy meal prep.
