Description

This No-Bake Vanilla Tiramisu Roll is a dreamy dessert that combines the classic flavors of tiramisu with a soft vanilla sponge-like base—no oven required! Ladyfingers are soaked in coffee and layered with a rich vanilla mascarpone filling, then rolled up into a beautiful spiral. Dust with cocoa powder for the perfect finish!

2024 ladyfingers (Savoiardi)

1 cup brewed coffee (cooled)

2 tablespoons coffee liqueur (optional, like Kahlúa or Baileys)

For the Vanilla Mascarpone Filling:

8 ounces (225g) mascarpone cheese, softened

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 teaspoon almond extract (optional, for extra depth)

For Dusting & Garnish:

2 tablespoons unsweetened cocoa powder

Dark chocolate shavings (optional)

Fresh berries or mint leaves (optional)


Instructions

. Prepare the Base:

  1. Line a large piece of plastic wrap or parchment paper on a clean surface.
  2. Quickly dip each ladyfinger into the cooled coffee mixture (don’t soak too long, or they’ll become too soft).
  3. Arrange the dipped ladyfingers in two rows, slightly overlapping, to form a rectangle (about 10×12 inches).

2. Make the Vanilla Mascarpone Filling:

  1. In a mixing bowl, beat mascarpone, powdered sugar, vanilla, and almond extract until smooth.
  2. In a separate bowl, whip heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the mascarpone mixture until smooth and fluffy.

3. Assemble & Roll:

  1. Spread the mascarpone filling evenly over the ladyfingers, leaving a slight border around the edges.
  2. Carefully roll the ladyfingers from the short end, using the plastic wrap to help shape it into a tight roll.
  3. Wrap tightly in plastic wrap and refrigerate for at least 4 hours (or overnight for best results).

4. Garnish & Serve:

  1. Remove the roll from the fridge and carefully unwrap.
  2. Dust with cocoa powder and top with chocolate shavings, fresh berries, or mint leaves for decoration
