This No-Bake Vanilla Tiramisu Roll is a dreamy dessert that combines the classic flavors of tiramisu with a soft vanilla sponge-like base—no oven required! Ladyfingers are soaked in coffee and layered with a rich vanilla mascarpone filling, then rolled up into a beautiful spiral. Dust with cocoa powder for the perfect finish!
Ingredients
For the Roll Base:
20–24 ladyfingers (Savoiardi)
1 cup brewed coffee (cooled)
2 tablespoons coffee liqueur (optional, like Kahlúa or Baileys)
For the Vanilla Mascarpone Filling:
8 ounces (225g) mascarpone cheese, softened
1 cup heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional, for extra depth)
For Dusting & Garnish:
2 tablespoons unsweetened cocoa powder
Dark chocolate shavings (optional)
Fresh berries or mint leaves (optional)
Instructions
. Prepare the Base:
- Line a large piece of plastic wrap or parchment paper on a clean surface.
- Quickly dip each ladyfinger into the cooled coffee mixture (don’t soak too long, or they’ll become too soft).
- Arrange the dipped ladyfingers in two rows, slightly overlapping, to form a rectangle (about 10×12 inches).
2. Make the Vanilla Mascarpone Filling:
- In a mixing bowl, beat mascarpone, powdered sugar, vanilla, and almond extract until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture until smooth and fluffy.
3. Assemble & Roll:
- Spread the mascarpone filling evenly over the ladyfingers, leaving a slight border around the edges.
- Carefully roll the ladyfingers from the short end, using the plastic wrap to help shape it into a tight roll.
- Wrap tightly in plastic wrap and refrigerate for at least 4 hours (or overnight for best results).
4. Garnish & Serve:
- Remove the roll from the fridge and carefully unwrap.
- Dust with cocoa powder and top with chocolate shavings, fresh berries, or mint leaves for decoration
