Ingredients

Units Scale
  • For the Crust:
  • 30 Oreo cookies (including filling)
  • 5 tablespoons unsalted butter (melted)
  • For the Cheesecake Filling:
  • 16 oz (2 blocks) cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup red and blue Oreo pieces (chopped; use limited-edition Oreos if available)
  • For Topping:
  • 1/2 cup red, white, and blue sprinkles
  • Optional: extra crushed Oreos for garnish

Instructions

  • Make the Crust:
  • Line an 8×8-inch baking dish with parchment paper.
  • Crush the Oreo cookies in a food processor or in a sealed bag with a rolling pin.
  • Mix the crumbs with melted butter and press firmly into the bottom of the baking dish. Chill in the fridge while making the filling.
  • Prepare the Cheesecake Filling:
  • In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until combined.
  • Stir in the chopped red and blue Oreo pieces.
  • Assemble and Chill:
  • Spread the cheesecake mixture evenly over the Oreo crust.
  • Sprinkle the top with red, white, and blue sprinkles.
  • Cover and refrigerate for at least 4 hours (or overnight) until firm.
  • Serve & Enjoy:
  • Lift the cheesecake out of the pan using the parchment paper.
  • Cut into squares and serve chilled.

Notes

  • Use Golden Oreos instead of regular Oreos for a lighter flavor.
  • If you can’t find patriotic Oreos, just use regular ones and mix in red and blue food coloring.
  • These bars can be stored in the fridge for up to 5 days or frozen for longer storage.
