- 1 cup pitted dates (softened if needed)
- 1 cup walnuts (or almonds)
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup (or honey)
- 1/4 teaspoon salt
- 1 tablespoon water (if needed)
- 1/4 cup mini chocolate chips (optional)
Instructions
- Blend the nuts – In a food processor, blend the walnuts until they form a fine crumb.
- Add remaining ingredients – Add dates, cocoa powder, vanilla, maple syrup, and salt. Blend until a sticky dough forms. If the mixture is too dry, add a little water, one teaspoon at a time.
- Fold in chocolate chips – If using, stir in mini chocolate chips by hand.
- Roll into balls – Scoop out small portions and roll into bite-sized balls.
- Chill & enjoy – Place in the fridge for at least 15 minutes to set. Enjoy immediately or store in an airtight container.
Notes
- If your dates are dry, soak them in warm water for 10 minutes and drain before using.
- Swap walnuts for almonds, pecans, or cashews for a different flavor.
- Add a pinch of cinnamon or espresso powder for extra depth.
