Description

These No-Bake Biscoff Cookie Truffles are rich, creamy, and full of warm spiced cookie flavor. Made with crushed Biscoff cookies, cream cheese, and a white chocolate coating, they’re the ultimate easy dessert for holidays, parties, or anytime you’re craving a no-bake treat.

 


Ingredients

1 (8.8 oz) package Biscoff cookies (about 32 cookies)

4 oz cream cheese, softened

1/2 teaspoon vanilla extract (optional)

8 oz white chocolate or almond bark, melted

Optional: extra crushed Biscoff cookies or cookie crumbs for garnish


Instructions

  1. Crush the Cookies:
    Place Biscoff cookies in a food processor and pulse into fine crumbs. (Reserve 1–2 tablespoons for garnish, if desired.)

  2. Mix the Filling:
    In a medium bowl, combine cookie crumbs, softened cream cheese, and vanilla extract (if using). Mix until fully blended and dough-like.

  3. Shape the Truffles:
    Scoop about 1 tablespoon of the mixture and roll into balls. Place on a baking sheet lined with parchment paper. Freeze for 15–20 minutes until firm.

  4. Coat in Chocolate:
    Dip each chilled truffle in melted white chocolate using a fork or toothpick, letting excess drip off. Place back on parchment paper.

  5. Garnish (Optional):
    While the coating is still wet, sprinkle with reserved cookie crumbs or drizzle with extra melted Biscoff spread.

  6. Chill & Serve:
    Refrigerate until the chocolate is set. Enjoy chilled or at room temperature.


Notes

  • Swap white chocolate for dark or milk chocolate if preferred.

  • Biscoff spread can be added to the filling for an extra boost of flavor—just reduce cream cheese slightly.

 

  • Store in an airtight container in the fridge for up to 1 week, or freeze for longer storage.
