For the Crust:
- 2 cups graham cracker crumbs (about 14 graham crackers)
- 1/2 cup unsalted butter, melted
- 1/4 cup brown sugar
For the Apple Filling:
- 3 large apples, peeled and diced (Granny Smith or Honeycrisp work best)
- 2 tablespoons unsalted butter
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch + 1 tablespoon water (to thicken)
For the Topping:
- 1 cup whipped topping (or homemade whipped cream)
- 1/4 teaspoon cinnamon (for dusting)
- 2 tablespoons caramel sauce (optional, for drizzling)
Instructions
- Make the crust: In a bowl, mix graham cracker crumbs, melted butter, and brown sugar until combined. Press firmly into an 8×8-inch pan. Chill in the fridge while preparing the filling.
- Cook the apples: In a pan over medium heat, melt butter. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook for 5-7 minutes until apples soften.
- Thicken the filling: Stir in vanilla extract. In a small bowl, mix cornstarch and water, then stir into the apples. Cook for 1-2 minutes until thickened. Remove from heat and let cool slightly.
- Assemble the bars: Spread the apple filling over the chilled crust. Top with whipped cream, then dust with cinnamon. Drizzle with caramel sauce if using.
- Chill & serve: Refrigerate for at least 2 hours before slicing into bars. Enjoy cold!
