Description

Miso Glazed Black Cod is a buttery, tender fish with a deeply flavorful miso marinade that caramelizes beautifully when cooked. Inspired by Japanese flavors, this dish is easy to prepare ahead and perfect for an elegant dinner at home.

Ingredients

  • 4 black cod fillets (about 5-6 oz each)

  • 1/4 cup white miso paste

  • 3 tablespoons mirin

  • 3 tablespoons sake

  • 2 tablespoons brown sugar

  • 1 tablespoon soy sauce

  • 1 teaspoon sesame oil (optional)

  • Chopped green onions and sesame seeds (for garnish)

Instructions

  1. In a small saucepan over medium heat, combine miso paste, mirin, sake, brown sugar, soy sauce, and sesame oil. Stir until smooth and sugar is dissolved. Remove from heat and let cool.

  2. Pat cod fillets dry and place them in a shallow dish or zip-top bag. Pour cooled marinade over the fish and coat evenly.

  3. Cover and marinate in the fridge for at least 2 hours, or overnight for deeper flavor.

  4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.

  5. Remove excess marinade from the fish (don’t wipe it off completely) and place fillets skin-side down on the baking sheet.

  6. Bake for 10–12 minutes, or until the fish flakes easily and the glaze is golden and bubbling. Broil for 1–2 minutes for extra caramelization if desired.

  7. Garnish with green onions and sesame seeds. Serve hot with rice and steamed veggies.

Notes

  • Black cod is also known as sablefish and is known for its buttery texture.

  • You can sub with regular cod or salmon, though the texture will differ.

  • This recipe is great for meal prep — marinate the night before and bake when ready.
