Description

These bite-sized treats are made with rich chocolate cake, peppermint frosting, and a smooth dark chocolate coating. They’re cool, fudgy, and totally irresistible—a holiday favorite with a minty twist!


Ingredients

(makes about 20–24 bites)

For the Cake Bites:
  • 1 box chocolate cake mix (plus eggs, oil, and water per package instructions)
    – OR – use 2 cups of leftover chocolate cake or brownies

  • 1/2 cup chocolate frosting (store-bought or homemade)

  • 1/2 tsp peppermint extract

For the Coating & Topping:

 

  • 1 1/2 cups dark or semisweet chocolate chips

  • 1 tsp coconut oil (for smoother melting)

  • 1/4 cup crushed peppermint candies or candy canes

  • Optional: white chocolate drizzle, festive sprinkles, or edible glitter


Instructions

  • Bake the cake:
    Prepare the chocolate cake according to package directions. Let it cool completely. You’ll only need about 2 cups of crumbled cake for this recipe.

  • Make the mixture:
    Crumble the cooled cake into a large bowl. Mix in chocolate frosting and peppermint extract. Stir until fully combined and fudgy.

  • Form the bites:
    Roll mixture into 1-inch balls and place them on a parchment-lined baking sheet. Chill in the fridge for 1 hour or freeze for 20 minutes until firm.

  • Melt the chocolate:
    In a microwave-safe bowl or double boiler, melt the chocolate chips with coconut oil until smooth.

  • Dip the cake bites:
    Use a fork or skewer to dip each ball into the melted chocolate. Tap off excess and return to the baking sheet.

  • Decorate:
    While the chocolate is still wet, sprinkle with crushed peppermint candy, sprinkles, or white chocolate drizzle.

 

  • Set & serve:
    Refrigerate the bites for 15–20 minutes until the chocolate is set. Store in an airtight container in the fridge for up to 1 week or freeze for up to 1 month.


Notes

  • Add a drop of green food coloring to the frosting for extra holiday flair.

  • Use gluten-free cake mix if needed.
