Description

These Mini Pancake Sausage Bites are a fun and delicious way to enjoy a classic breakfast combination in one bite!   • 3/4 cup buttermilk
  • 1 large egg

  • 2 tablespoons melted butter
  • 6 fully cooked breakfast sausages, cut into bite-sized pieces
  • Cooking spray or butter (for greasing the pan)
  • Maple syrup (for serving)

Instructions

  • Preheat Oven & Prep Pan:
  • Preheat oven to 375°F (190°C).
  • Grease a mini muffin tin with cooking spray or melted butter.
  • Make Pancake Batter:
  • In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk buttermilk, egg, vanilla, and melted butter.
  • Pour the wet ingredients into the dry ingredients and mix until just combined (do not overmix).
  • Assemble & Bake:
  • Fill each mini muffin cup about ¾ full with pancake batter.
  • Place a small piece of sausage in the center of each cup.
  • Bake for 12-15 minutes, or until golden brown and a toothpick inserted comes out clean.
  • Serve & Enjoy:
  • Let cool slightly before removing from the pan.
  • Serve warm with maple syrup for dipping.
