For the Pizza:
- 4 large flour tortillas
- 1/2 lb ground beef
- 1/2 packet taco seasoning (or homemade)
- 1/2 cup water
- 1/2 cup refried beans
- 1/2 cup enchilada sauce (or taco sauce)
- 1 cup shredded Mexican cheese blend
Toppings:
- 1/4 cup diced tomatoes
- 2 tbsp chopped green onions
- 2 tbsp sliced black olives (optional)
- 1/4 cup sour cream
- 1 tbsp chopped cilantro (optional)

Prepare the Beef:
- In a skillet over medium heat, cook the ground beef until browned.
- Drain excess grease, then add taco seasoning and water. Simmer for 5 minutes until thickened.

Crisp the Tortillas:
- Preheat the oven to 400°F (200°C).
- Lightly spray both sides of the tortillas with oil and bake on a sheet pan for 5-7 minutes, flipping halfway, until golden and crispy.

Assemble the Pizza:
- Spread refried beans on two tortillas, then top with seasoned beef.
- Place another tortilla on top and spread with enchilada sauce.
- Sprinkle with shredded cheese.
