Ingredients

Units Scale
  • :
  • For the Cookies:
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) eggnog
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1/2 tsp rum extract (optional, for extra eggnog flavor)
  • 2 1/2 cups (315g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • For the Eggnog Glaze:
  • 1 cup (120g) powdered sugar
  • 2 tbsp eggnog
  • 1/4 tsp ground nutmeg
  • 1/4 tsp vanilla extract

Instructions

  • :
  • Preheat & Prep: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream Butter & Sugar: In a large mixing bowl, beat the softened butter and sugar together until light and fluffy (about 2-3 minutes).
  • Add Wet Ingredients: Mix in the egg yolk, vanilla extract, rum extract (if using), and eggnog until smooth.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, nutmeg, and cinnamon.
  • Mix Dough: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  • Shape Cookies: Scoop tablespoon-sized portions of dough, roll into balls, and place them 2 inches apart on the prepared baking sheet. Flatten slightly with your fingers or the bottom of a glass.
  • Bake: Bake for 10-12 minutes, or until the edges are set but the centers are still soft. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Make the Glaze: In a small bowl, whisk together powdered sugar, eggnog, nutmeg, and vanilla extract until smooth.
  • Glaze & Serve: Drizzle the cooled cookies with the eggnog glaze, let it set for 15 minutes, then enjoy!

Notes

  • :
  • For extra eggnog flavor, sprinkle a little extra nutmeg on top of the glaze before it sets.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • If the dough is too soft to roll, chill it for 30 minutes before shaping the cookies.
