Description

This Melt in Your Mouth Chicken is a simple yet delicious recipe where chicken breasts are coated in a flavorful mixture of mayonnaise, Parmesan cheese, and seasonings, then baked to juicy perfection. It’s an easy weeknight dinner that pairs well with veggies, rice, or a fresh salad.

Ingredients

Units Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning (or dried parsley)
  • 1 teaspoon paprika (for color and flavor)

Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  • Prepare the topping: In a bowl, mix mayonnaise, Parmesan cheese, garlic powder, onion powder, salt, pepper, and Italian seasoning.
  • Coat the chicken: Place the chicken breasts in the baking dish and spread the mayonnaise mixture evenly over the top. Sprinkle with paprika for extra color.
  • Bake uncovered for 35–40 minutes, or until the chicken is cooked through (internal temperature of 165°F (75°C)).
  • Broil for 2–3 minutes at the end for a golden, crispy top (optional).
  • Rest and serve: Let the chicken sit for a few minutes before serving. Enjoy with roasted vegetables, mashed potatoes, or a side salad.

Notes

  • Greek yogurt can be used instead of mayonnaise for a tangy, lower-fat option.
  • Add a pinch of red pepper flakes for a little heat.
  • Leftovers store well in the fridge for up to 3 days.
