Description

This Tzatziki Chicken Salad is a refreshing and protein-packed dish inspired by Mediterranean flavors. Juicy chicken is tossed with a creamy, garlicky tzatziki sauce, crisp cucumbers, cherry tomatoes, and fresh herbs. Serve it in a pita, on a bed of greens, or as a sandwich for a light and delicious meal!


Ingredients

For the Tzatziki Dressing:

1 cup Greek yogurt (full-fat or low-fat)

1/2 cucumber, grated and squeezed to remove excess water

1 clove garlic, minced

1 tablespoon lemon juice

1 teaspoon red wine vinegar

1 tablespoon olive oil

1 tablespoon fresh dill, chopped (or 1 teaspoon dried)

1/2 teaspoon salt

1/4 teaspoon black pepper

For the Chicken Salad:

2 cups cooked chicken, shredded or chopped (grilled, rotisserie, or baked)

1/2 cup cucumber, diced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup Kalamata olives, chopped (optional)

1/4 cup feta cheese, crumbled

2 tablespoons fresh parsley, chopped


Instructions

Make the Tzatziki Dressing

  1. In a bowl, mix together Greek yogurt, grated cucumber, garlic, lemon juice, red wine vinegar, olive oil, dill, salt, and pepper.
  2. Stir well and let sit for 10 minutes to allow flavors to blend.

2. Prepare the Chicken Salad

  1. In a large bowl, combine shredded chicken, diced cucumber, cherry tomatoes, red onion, olives, feta, and parsley.
  2. Pour the tzatziki dressing over the mixture and toss until evenly coated.

3. Serve & Enjoy!

  1. Serve chilled on a bed of greens, in a pita, as a wrap, or with crackers.

Notes

  • Make it dairy-free: Use dairy-free yogurt and omit feta.
  • For extra crunch, add chopped bell peppers or toasted almonds.
