This Tzatziki Chicken Salad is a refreshing and protein-packed dish inspired by Mediterranean flavors. Juicy chicken is tossed with a creamy, garlicky tzatziki sauce, crisp cucumbers, cherry tomatoes, and fresh herbs. Serve it in a pita, on a bed of greens, or as a sandwich for a light and delicious meal!
Ingredients
For the Tzatziki Dressing:
1 cup Greek yogurt (full-fat or low-fat)
1/2 cucumber, grated and squeezed to remove excess water
1 clove garlic, minced
1 tablespoon lemon juice
1 teaspoon red wine vinegar
1 tablespoon olive oil
1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
1/2 teaspoon salt
1/4 teaspoon black pepper
For the Chicken Salad:
2 cups cooked chicken, shredded or chopped (grilled, rotisserie, or baked)
1/2 cup cucumber, diced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
1/4 cup Kalamata olives, chopped (optional)
1/4 cup feta cheese, crumbled
2 tablespoons fresh parsley, chopped
Instructions
Make the Tzatziki Dressing
- In a bowl, mix together Greek yogurt, grated cucumber, garlic, lemon juice, red wine vinegar, olive oil, dill, salt, and pepper.
- Stir well and let sit for 10 minutes to allow flavors to blend.
2. Prepare the Chicken Salad
- In a large bowl, combine shredded chicken, diced cucumber, cherry tomatoes, red onion, olives, feta, and parsley.
- Pour the tzatziki dressing over the mixture and toss until evenly coated.
3. Serve & Enjoy!
- Serve chilled on a bed of greens, in a pita, as a wrap, or with crackers.
Notes
- Make it dairy-free: Use dairy-free yogurt and omit feta.
- For extra crunch, add chopped bell peppers or toasted almonds.
