Description

This rich, creamy, and comforting soup is inspired by the beloved “Marry Me Chicken” dish. With tender chicken, sun-dried tomatoes, Parmesan cheese, and a creamy broth, it’s packed with flavor and perfect for a cozy dinner.


Ingredients

  • 1 tbsp unsalted butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 4 cups chicken broth
  • 1 1/2 cups heavy cream (or half-and-half for a lighter version)
  • 2 cups cooked chicken, shredded or diced
  • 1 cup uncooked pasta (small shapes like orzo or ditalini)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 2 cups fresh spinach, chopped
  • 2 tbsp fresh basil, chopped (for garnish)

Instructions

  • Sauté Aromatics: In a large pot, heat olive oil and butter over medium heat. Add onion and cook until soft (about 3 minutes). Stir in garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook for another minute until fragrant.
  • Add Broth & Chicken: Pour in chicken broth and bring to a simmer. Add the cooked chicken and let it heat through.
  • Cook the Pasta: Add the pasta and cook until tender (about 10 minutes, depending on the type used). Stir occasionally.
  • Make It Creamy: Reduce heat to low. Stir in heavy cream and Parmesan cheese until smooth.
  • Add Spinach & Season: Stir in fresh spinach, salt, and black pepper. Simmer for another 2 minutes until the spinach wilts.
  • Serve & Garnish: Ladle into bowls and top with fresh basil and extra Parmesan. Enjoy!
