Ingredients
- 1 1/2 lbs (680g) baby carrots or sliced whole carrots
- 3 tbsp unsalted butter
- 2 tbsp pure maple syrup
- 1/2 tsp cinnamon (optional, for warmth)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp fresh thyme or parsley (for garnish)
- 1/4 cup chopped pecans or walnuts (optional, for crunch)
Instructions
Cook the carrots:
Bring a large pot of salted water to a boil.
Add the carrots and cook for 5-7 minutes, until just fork-tender. Drain and set aside.
Make the brown butter:
In a large skillet over medium heat, melt the butter. Stir continuously as it foams and turns golden brown (about 3 minutes).
Once it smells nutty, remove from heat and immediately stir in the maple syrup, cinnamon, salt, and pepper.
Glaze the carrots:
Add the drained carrots to the skillet and toss to coat in the glaze.
Cook over medium heat for 3-5 minutes, stirring occasionally, until the carrots are caramelized.
Garnish & serve:
Sprinkle with fresh thyme or parsley and optional chopped pecans for extra crunch.
Serve warm and enjoy!
Notes
- Roasting Option: Instead of boiling, roast the carrots at 400°F (200°C) for 25-30 minutes, then toss in the brown butter maple glaze.
- Vegan Option: Swap butter for vegan butter or coconut oil.
- Make-Ahead Tip: Cook the carrots in advance and reheat in the glaze before serving.
