Description
Maltesers Rocky Road is a fun, no-bake dessert made with crushed biscuits, marshmallows, and crunchy Maltesers, all coated in rich melted chocolate. It’s quick to prepare and perfect for sharing!
Ingredients
14 oz (400g) milk or dark chocolate, chopped
1/2 cup (115g) unsalted butter
1/3 cup (120g) golden syrup or honey
2 cups (100g) mini marshmallows
1 1/2 cups (150g) Maltesers
1 1/2 cups (150g) digestive biscuits or graham crackers, crushed
(Optional) 1/2 cup (75g) chopped nuts
(Optional) Powdered sugar for dusting
Instructions
Melt the Chocolate Mixture
In a heatproof bowl, melt the chocolate, butter, and golden syrup together over a double boiler (or in 30-second microwave intervals), stirring until smooth.
2. Mix the Ingredients
In a large bowl, combine crushed biscuits, mini marshmallows, and Maltesers.
Pour the melted chocolate mixture over the dry ingredients and stir until everything is well coated.
3. Set in a Pan
Line an 8×8-inch (20cm) baking pan with parchment paper.
Pour the mixture into the pan and spread evenly.
Chill in the refrigerator for at least 2 hours, or until firm.
4. Slice & Serve
Once set, remove from the pan and cut into squares.
(Optional) Dust with powdered sugar for a classic rocky road look.
Notes
- Want extra crunch? Add chopped nuts or extra Maltesers on top before chilling.
- Make it even more indulgent by drizzling melted white chocolate over the top before serving.
- Store in an airtight container in the fridge for up to 1 week.
