Ingredients

1/2 cup (1 stick) butter, melted

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1 cup granulated sugar

1 cup milk

1 teaspoon vanilla extract

Zest of 1 lemon

1 (21-ounce) can lemon pie filling or homemade equivalent
Instructions

Preheat your oven to 350°F (175°C).

Pour the melted butter into a 9×9-inch baking dish.

In a medium bowl, mix flour, baking powder, salt, sugar, milk, vanilla, and lemon zest until smooth.

Pour the batter over the melted butter in the dish. Do not stir.

Spoon the lemon pie filling evenly over the batter. Do not stir.

Bake for 45–50 minutes or until the top is golden brown and the center is set.

Let it cool slightly before serving. Great on its own or with a scoop of vanilla ice cream!
