Description

This Magic Lemon Cobbler is a bright, sweet dessert with a buttery crust and tangy lemon filling that magically separates while baking. It’s super easy to make with basic ingredients and no complicated steps—perfect for spring and summer!


Ingredients

  • 1/2 cup (1 stick) butter, melted

  • 1 cup all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1 cup granulated sugar

  • 1 cup milk

  • 1 teaspoon vanilla extract

  • Zest of 1 lemon

 

  • 1 (21-ounce) can lemon pie filling or homemade equivalent


Instructions

  • Preheat your oven to 350°F (175°C).

  • Pour the melted butter into a 9×9-inch baking dish.

  • In a medium bowl, mix flour, baking powder, salt, sugar, milk, vanilla, and lemon zest until smooth.

  • Pour the batter over the melted butter in the dish. Do not stir.

  • Spoon the lemon pie filling evenly over the batter. Do not stir.

  • Bake for 45–50 minutes or until the top is golden brown and the center is set.

 

  • Let it cool slightly before serving. Great on its own or with a scoop of vanilla ice cream!


Notes

  • You can use homemade lemon pie filling if preferred.

  • The batter will rise to the top as it bakes, forming a crust over the filling—that’s the “magic!”

  • This dessert is best served warm but also tastes great chilled.
