Ingredients

2 cups elbow macaroni, uncooked

1 (14 oz) bag coleslaw mix

1 small onion, finely chopped

2 celery stalks, diced

1/2 cup red or green bell pepper, diced

1/4 cup dill pickle relish (optional)
For the Dressing:

1 cup mayonnaise

1/4 cup apple cider vinegar

1/4 cup sugar

1 tablespoon Dijon mustard

1/2 teaspoon celery seed

Salt and pepper to taste
Instructions

Cook macaroni according to package directions. Drain and rinse under cold water to stop cooking. Let cool completely.

In a large bowl, combine cooked macaroni, coleslaw mix, onion, celery, bell pepper, and relish if using.

In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, mustard, celery seed, salt, and pepper until smooth.

Pour dressing over the macaroni mixture and toss well to coat.

Cover and refrigerate for at least 1 hour before serving.
