Description

This Macaroni Coleslaw is a creamy, crunchy, and refreshing twist on traditional pasta salad. With tender elbow macaroni, crisp coleslaw mix, and a tangy-sweet dressing, it’s the perfect side dish for picnics, potlucks, and BBQs.


Ingredients

  • 2 cups elbow macaroni, uncooked

  • 1 (14 oz) bag coleslaw mix

  • 1 small onion, finely chopped

  • 2 celery stalks, diced

  • 1/2 cup red or green bell pepper, diced

  • 1/4 cup dill pickle relish (optional)

For the Dressing:

  • 1 cup mayonnaise

  • 1/4 cup apple cider vinegar

  • 1/4 cup sugar

  • 1 tablespoon Dijon mustard

  • 1/2 teaspoon celery seed

  • Salt and pepper to taste


Instructions

  1. Cook macaroni according to package directions. Drain and rinse under cold water to stop cooking. Let cool completely.

  2. In a large bowl, combine cooked macaroni, coleslaw mix, onion, celery, bell pepper, and relish if using.

  3. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, mustard, celery seed, salt, and pepper until smooth.

  4. Pour dressing over the macaroni mixture and toss well to coat.

  5. Cover and refrigerate for at least 1 hour before serving.

  6. Stir before serving and adjust seasoning if needed.


Notes

  • This salad tastes even better the next day once the flavors meld.

  • Add chopped cooked ham or shredded chicken for a heartier version.

  • Use light mayo or Greek yogurt for a lighter dressing.
